Christmas Cookie Recipe
Christmas Cookie Recipe. When the holidays arrive in the Great Smoky Mountains there are many HeySmokies sweet treat favorites but the traditional Christmas cookie is a must. We make a double batch to share with friends and neighbors. If there are any left over, and there never are, we freeze them until our next cookie craving! We hope you enjoy this time honored recipe and have a delicious holiday.
Christmas Cookie Recipe:
3 3/4 cups all-purpose flower
1 teaspoon baking powder
1 cup softened butter
1/2 teaspoon salt
2 eggs
2 teaspoons vanilla extract
1 1/2 cups refined sugar
Icing Recipe:
2 cups confectioners’ sugar
4 teaspoons light corn syrup
4 teaspoons whole milk
Remove butter from fridge to soften. Sift flour, baking powder and salt together and set aside untill later. Cream together butter and sugar in a big bowl until fluffy. Beat in the eggs and mix in the vanilla. Slowly mix in the sifted flour, baking powder and salt. Cover the dough and chill a couple of hours in the fridge.
Heat oven to 400 degrees F. Grease cookie sheet or use a Silpat. On a piece of floured parchment paper or cutting board roll out dough to 1/4 inch thickness and cut out cookies with your favorite cookie cutter.
Bake 6 – 8 minutes (depending on your oven) in the heated oven. Remove from oven and allow to cool on a wire rack.
Baking tip: When the edges of the cookie begin to brown they are usually ready to remove from the oven.
